Initially, I was drawn to it because I had most of the ingredients. The ones I didn’t have I would use again. The chickpeas gives it a nice fiber boost. I agree with Bowls when they describe the Pantry Chickpea Bowl as a ‘well-balanced, stress-free, and, most important, delicious meal for any night of the week.’ If you don’t have pistachios, feel free to toast any chopped nuts you have in the pantry and use any greens you have on hand. Also, if there are no eggs in the house, leftover fish or chicken could also do in a pinch.</p>
